As a busy Londoner, mindful eating can often be the last thing on your mind, which is why Mindful Chef has brought together a team of experienced chefs and nutritionists who take the hassle out of clean eating by delivering you all the ingredients to make healthy meals.
Mindful Chef was set up in 2014 by two friends, Myles Hopper and Giles Humphries, driven by frustration at the lack of healthy food easily available to those with less and less time to look after themselves around crazy work schedules. For so many people, cooking in the evening after work consists of a grab and go processed pasta dish, which simply isn’t right, so created Mindful Chef to make healthy eating easy.
All of the recipes include award-winning organic meat and vegetables from West Country farms, and leave out pasta, white rice and bread, guaranteeing that each meal is delicious & nutritious, high protein and free from unnecessary fillers. In addition to that, each meal is designed to take you from ‘prep to plate’ in under 30 minutes.
I recently made three Mindful Chef meals, all of which were quick and simple to make. Mindful Chef take out all of the stresses of buying the right ingredients and measuring out exactly how much is needed, leaving you with the fun part of cooking.

Each meal was mouth-wateringly good and worth taking the time to cook, the portions were also filling and very generous in size.
It’s easy to fall into the pattern of eating the same foods over and over again, Mindful Chef offers exciting recipes which offer something new everyday. Other recipes include dishes such as: Mongolian beef with egg fried cauliflower rice, Cajun chicken & lettuce tacos with carrot fries, Thai pork meatballs in a coconut & courgetti noodle soup, Baked salmon with homemade pesto & aubergine ratatouille, and Beetroot falafels & parsley quinoa with fennel & orange slaw.
Pricewise, a box of three non-vegetarian meals for one person costs £24, a box of three vegetarian meals for one person costs £19.50. From there on, you can order boxes with meals for two or four people, and additional meals. Check out the Mindful Chef website here.
